  <title>cooking friends</title>

  <description>it&apos;s supposed to snow like 13 inches here tommorrow. to pre-game,&lt;br /&gt;we went to the store  tonight to get it done. It was almost as if&lt;br /&gt;I were in florida again for hurricane season. the vegetables were &lt;br /&gt;picked bare, all the canned goods were gone. crazy insane madness.&lt;br /&gt;&lt;br /&gt;while waiting for lines to open up at wholefoods I had a lengthy&lt;br /&gt;conversation with one of the employees about the decided lack of&lt;br /&gt;lazy vegan prepared foods or quality of frozen foods. everything &lt;br /&gt;costs a million dollars and tastes like processed sawdust.&lt;br /&gt;&lt;br /&gt;we got to talking about cooking and I told him about the DIY fake&lt;br /&gt;cheese I&apos;ve been making. he was really curious so we exchanged &lt;br /&gt;email addresses. Turns out he lives in philly, so we&apos;re going to &lt;br /&gt;have a recipe exchange. Cooking friends, Huzzah!</description>

  <description>&lt;b&gt;easymode lunch/dinner/brekkies:&lt;/b&gt;&lt;br /&gt;1 cup short grain kokuho rose sushi rice&lt;br /&gt;1 brick soyboy carib. style baked xtra firm tofu&lt;br /&gt;1 Anaheim pepper&lt;br /&gt;1/4 cup diced onions&lt;br /&gt;30 snowpeas (in pod, with the ends snipped off) &lt;br /&gt;Soyvey! veri veri teriyaki sauce&lt;br /&gt;extra virgin olive oil&lt;br /&gt;Kodoya sesame oil&lt;br /&gt;turmeric powder&lt;br /&gt;garlic powder&lt;br /&gt;black pepper&lt;br /&gt;&lt;br /&gt;&lt;b&gt;needed:&lt;/b&gt;&lt;br /&gt;large frying pan&lt;br /&gt;medium saucepot&lt;br /&gt;wire mesh colander &lt;br /&gt;a large, sharp knife&lt;br /&gt;&lt;br /&gt;&lt;a name=&quot;cutid1&quot;&gt;&lt;/a&gt;&lt;br /&gt;&lt;b&gt;&lt;u&gt;Rice preparation:&lt;/u&gt;&lt;/b&gt;&lt;br /&gt;empty 1 cup of rice into the wiremesh colander, then put the &lt;br /&gt;colander into the medium sauce pot. fill the pot with water,&lt;br /&gt;just enough to cover the rice. using your hands, lightly grind &lt;br /&gt;the rice against the colander, working the rise in slow circular &lt;br /&gt;motions. the water will become milky white from the starchy &lt;br /&gt;residue.&lt;br /&gt;&lt;br /&gt;remove the collander  and empty the water from the pot, then put&lt;br /&gt;thecolander back into the pot and refil with water, just enough &lt;br /&gt;to cover the rice. Now let the rice soak for about 20-25 minutes.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;b&gt;&lt;u&gt;Veg &amp; Tofu prep:&lt;/u&gt;&lt;/b&gt;&lt;br /&gt;Using your sharp knife. cut the endcap &amp; tip off the pepper, then &lt;br /&gt;slice it in two. using a soup spoon, scrape along the interior to &lt;br /&gt;remove the guts and the seeds, &amp; get rid of them. Take your scraped&lt;br /&gt;pepper halves &amp; cut them into thin strips. Set aside in the pan.&lt;br /&gt;[make sure you wash your hands after handling peppers. Don&apos;t touch &lt;br /&gt;your lips, nose, or eyes, as the pepper residue will make you hate &lt;br /&gt;your life]&lt;br /&gt;&lt;br /&gt;Take your square brick of tofu and slice it into thin, even sections, &lt;br /&gt;then draw your knife acors these sections, cutting them into little&lt;br /&gt;rectangles. they have a habit of sticking together, so manually &lt;br /&gt;seperate them and toss them into the pan. you&apos;ll be surprised at how&lt;br /&gt;much you can get out of one of those tiny bricks. &lt;br /&gt;&lt;br /&gt;Add your snowpeas &amp; diced onions to the pan. I bisect my snowpeas to &lt;br /&gt;make them more smaller/bite sized portions, but this is personal&lt;br /&gt;preference. spread the mixture out &amp; lightly drizzle with olive oil.&lt;br /&gt;you don&apos;t want alot, as you only really need a little oil. Set pan &lt;br /&gt;aside.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;b&gt;&lt;u&gt;Rice Cooking:&lt;/u&gt;&lt;/b&gt;&lt;br /&gt;I use a gas stove, so you electric users will have to fuddle through&lt;br /&gt;this on your own. remove the colander from the pot &amp; empty the water,&lt;br /&gt;allowing the rice to drain. Empty the rice from the colander into the &lt;br /&gt;pot, and then aadd 1 &amp; 3/4 cups water. Set the pot to boil on high heat&lt;br /&gt;(6 or above on a gas stove), &amp; place a lid slightly askew on the pot.&lt;br /&gt;&lt;br /&gt;you&apos;re going to need to be vigilant with your rice. let it boil too &lt;br /&gt;long and you&apos;ll burn the rice on the bottom. So no going AFK to play &lt;br /&gt;WoW or something. Periodically check the water level of the rice. Once&lt;br /&gt;you don&apos;t see any water on the surface/is mostly absorbed, stir the rice&lt;br /&gt;briskly using a large spoon, folding it over itself, then smooth it out.&lt;br /&gt;reduce heat to between 3 &amp; 2, and replace the lid.&lt;br /&gt; &lt;br /&gt;I reccomend starting the cooking of your Veg/tofu concotion as soon as &lt;br /&gt;you reach this point, as they will both finish around the same time. &lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;b&gt;&lt;u&gt;Veg/Tofu Cooking:&lt;/u&gt;&lt;/b&gt;&lt;br /&gt;Set your stove to high heat. A gas stove heats up pretty fast, so once &lt;br /&gt;you start hearing your pan sizzle, start tossing your mix to get the oil&lt;br /&gt;coating everything. Sprinkle some garlic powder(not too much) and black &lt;br /&gt;pepper, and liberally shake some turmeric over the top of this.&lt;br /&gt;&lt;br /&gt;every minute or so you&apos;ll want to toss the mix, using either a one handed &lt;br /&gt;pan flip (or a spatula if you lack the skillz ;p). You&apos;ll want to let the &lt;br /&gt;tofu/veg mix become a nice golden brown, with your spices evenly coating&lt;br /&gt;everything with each flip. once you reach this pint, drizzle a tiny ammount&lt;br /&gt;of sesame oil over the top &amp; mix it in thoroughly.&lt;br /&gt;&lt;br /&gt;Periodically check your rice while you&apos;re doing this. once your rice reaches&lt;br /&gt;a point where it look big, glossy &amp; puffy, reduce heat to low &amp; replace the &lt;br /&gt;lid. &lt;br /&gt;&lt;br /&gt;When you reach this point, take your Soyvey teriyaki(I love this stuff!) &amp;&lt;br /&gt;liberally coat your veg mixture. Not a ton, but enough to coat. when it hits&lt;br /&gt;thepan it&apos;ll start to sizzle &amp; thicken, becoming a glossy sweet glaze. Stir&lt;br /&gt;your mix to keep it from burning, then reduce your heat to low.&lt;br /&gt;&lt;br /&gt;Remove the lid from your rice, and test a spoonful. if the rice is soft, &lt;br /&gt;sticky, &amp; puffy, it&apos;s perfect. if not, let it steam a few minutes more. &lt;br /&gt;Spoon the entire pot of rice into the veg pan, and thoroougly mix it. The&lt;br /&gt;rice will pick up any leftover oil or glaze. &lt;br /&gt;&lt;br /&gt;&lt;b&gt;&lt;u&gt;Serving:&lt;/u&gt;&lt;/b&gt;&lt;br /&gt;&lt;br /&gt;spoon the concotion into large bowls and serve! No mess no fuss! Make enough &lt;br /&gt;for 2 people, or one really hungry person with enough for leftovers! Enjoy!&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;total cook time: maybe 40 minutes</description>
